This course provides learners with a foundational understanding of clinical nutrition within the context of food service and nutrition management. Students will examine various disease states and the corresponding therapeutic diets used in healthcare settings. This includes recognizing nutrition-related risks in long-term care environments and understanding the specific nutritional needs of older adults.
Key topics include the role of food and dietary modifications in managing chronic conditions, the use of nutrition supplements in clinical care, and the application of texture-modified diets to support nutrition. The course also highlights the critical role of the food service and nutrition manager as an integral member of the interdisciplinary healthcare team.
